I have read your article at least three ti...Deana,<br /><br />I have read your article at least three times as I have a great interest in spices and their history. Bravo! The research you must have done.<br /><br />I find it interesting that aside from Mexican food, no other cuisine in South America embraced the hotter varieties of chiles. I am thinking in particular of Cuban food. Havana was the center of distribution between the New World and the old so a lot of these chiles certainly came to port. What grew in Mexico seems to have stayed in Mexico! Green peppers, yes...an important component of "sofrito" but that's about it.<br /><br />As to the Colony, had lunch there once on a Sunday with a great aunt. Need I say more?
