I would never dream of making sea urchin soufflé, let alone eating them; I figured it is something I would eat fresh from the sea at some point probably in Lebanon; I used to see fishermen get it when I was a kid and offer it to people fresh from the sea, in its thorny black shell. People would squeeze lemon on the thing and that was the extent of that, slurp and it is gone. You always amaze me with your imaginative creations and the story you broach around them.
